Buttermilk Pancakes

Ingredients 

  • 2 cups all-purpose flour

  • ½ teaspoon ground cinnamon

  • 3 tablespoons sugar

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 large egg, lightly beaten

  • 1 ½ cups buttermilk

  • 3 tablespoons melted butter, plus more for serving

  • Maple syrup, for serving

Directions

  1. In a medium bowl, whisk together the flour, cinnamon, sugar, baking powder, baking soda, and salt.

  2. In a large bowl, whisk the melted butter, buttermilk, and egg until fully combined.

  3. Add the dry ingredients to the wet ingredients and whisk until just combined. Avoid overmixing to keep the batter light and fluffy.

  4. Heat a lightly oiled frying pan over medium-high heat. Scoop ⅓ cup of the batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until the second side is lightly browned.

  5. Serve the pancakes warm with a knob of butter and maple syrup.
