Huevos Rancheros

Ingredients 

  • 4 corn tortillas

  • 2 eggs, fried

  • 1 (15 oz.) can of beans (your choice)

  • 1 ½ cups of salsa

  • ½ avocado, sliced

  • Salt and pepper

  • ¼ cup cilantro leaves (for garnish)

  • Hot sauce (optional)

  • Cotija cheese (for garnish, optional)

  • Restaurant syle salsa

Directions

Prepare the Restaurant-Style Salsa using this recipe or your homemade favorite.

In a medium-sized saucepan, add the beans, salsa, and a pinch of salt. Stir the mixture and bring to a simmer, cooking until most of the liquid has absorbed.

Char the tortillas over an open flame or in a dry skillet over medium-high heat. If charring over an open flame, use low heat and watch carefully to prevent burning. Keep the tortillas warm.

Fry the eggs to your liking and set aside.

To assemble, place 2 tortillas on each plate. Divide the bean mixture evenly, then top with the fried eggs and sliced avocado.

Garnish with additional salsa, cilantro, cotija cheese, and hot sauce, if desired.
