Mango Strawberry Popsicles

Ingredients 

  • 1 ripe medium mango - peeled, pitted, and chopped 


  • 2 cups of strawberries - hulled and chopped

  • 2 tablespoons of agave, maple syrup, or honey

  • 1/2 teaspoon salt

  • Juice of half a lime

Directions

  1. In a blender or food processor, combine the strawberries, one tablespoon of honey, and one teaspoon of lime juice. Blend until you have a puree. Pour half the puree into the molds of your popsicle maker and pour the other half into a measuring cup.

  2. In a food processor or blender, puree the mangoes with the remaining 1/4 cup of sugar, lime juice, and salt. Pour the puree into a bowl.

  3. In a clean food processor or blender, puree the strawberries until smooth.

  4. Pour the mango puree, then the strawberry puree, filling the molds to the top. Use a knife to swirl the two purees together gently.

  5. Place the molds in the freezer and freeze for 4 hours or overnight. To remove the popsicles, run the mold under hot water for 10 seconds, and serve immediately.
