Strawberry-Rum Coolers

Ingredients 

Strawberry-Rum Cooler Base:

  • 2 ½ cups very ripe strawberries, hulled and sliced

  • 1 cup water

  • 2 tablespoons fresh lime juice

  • 2 tablespoons agave syrup

  • ¼ teaspoon ginger

Assembly (per drink):

  • ¼ cup strawberry-rum cooler base

  • 2 tablespoons white rum

  • 2 tablespoons dark rum

  • 6 dashes orange bitters

  • ¼ cup ginger beer

  • Crushed ice

  • Orange wedge, for garnish

Directions

  1. Bring the strawberries, water, lime juice, agave syrup, and ginger to a simmer in a saucepan over medium-low heat. Cook until the mixture is fragrant and the strawberries are tender. Remove from the heat and let it cool completely, about 1 hour.

  2. Transfer the strawberry mixture to a blender and process until smooth. Refrigerate for at least 1 hour or up to 5 days.

  3. For each drink, combine ¼ cup of the strawberry-rum cooler base, both rums, and the dashes of bitters in a mixing glass. Add ice and stir until the ice dilutes the puree.

  4. Pour the mixture over crushed ice, top with ginger beer, and garnish with an orange wedge.
